Capriotti’s, the sandwich shop which has been slow-roasting turkeys overnight for 40 years, is expanding into three states. In Colorado, restaurateur Kevin Cornett has a 12 unit deal and will open the first two or possibly three locations in 2019.
Targeted areas are Denver, Fort Collins and Boulder. Cornett will also develop six units in Utah.
South Dakota will see its first Capriotti’s opened by husband and wife team Aaron and Tonya Niewald. The couple will open three locations in the next three years. In Delaware, three new locations are set to be opened by David Carpenter, Jeff Kaczmarczyk and Penne Finkley over the next three years.
