El Pollo Loco has announced the signing of a multi-unit development deal in Seattle to open four locations in metro Seattle, particularly across Pierce County and south King County.
All four locations will be owned and operated by Jean-Paul Pirio. Pirio is a 20-year plus veteran of the restaurant industry who already owns five restaurants and bars throughout the south Puget Sound.
“Restaurants are all I’ve done my whole life. My first job ever was restaurants. All I’ve ever known was waiting tables, busing table,” said Pirio.
“I was looking for a unique concept with a rich tradition that had the ability to bring people together around food, family and culture. I found the perfect match with El Pollo Loco and can’t wait to introduce local customers to the brand’s signature chicken, handcrafted Mexican entrees and assortment of healthy offerings.”

The four new units will feature the brand’s new prototype store design, which is geared toward the brand’s off-premises business. The new design also includes a dining room that opens into a patio, a drive-thru, and designated curbside pick-up parking.
